  • ¼ cup diced sundried tomatoes
  • 3 cloves garlic (minced)
  • ¼ cup flour
  • 68 cups chicken broth
  • 6 oz small pasta (like shells)
  • 1 cup heavy whipping cream
  • 2 ½3 cups fresh spinach
  • Grated parmesan cheese for garnish

Instructions

  1. In a large pot, heat the olive oil over medium-high heat. Add the diced chicken with Italian seasoning, salt, and pepper. Cook until browned.
  2. Stir in the onions, carrots, celery, sundried tomatoes, and garlic; sauté until translucent.
  3. Sprinkle flour over the mixture; stir well. If using tomato paste, add it now.
  4. Gradually whisk in the chicken broth; bring to a boil.
  5. Add pasta and simmer for about 20 minutes until cooked through.
  6. Stir in heavy cream and spinach; simmer for an additional 5 minutes.
