  • 1 (15-ounce) can black beans, drained and rinsed
  • 1 (10-ounce) can diced tomatoes with green chilies
  • 1 cup diced potatoes (peeled or unpeeled)
  • 1 teaspoon smoked paprika
  • 1 teaspoon chili powder
  • ½ teaspoon ground cumin
  • Salt and black pepper, to taste
  • 1 cup heavy cream or half-and-half
  • 1 cup shredded cheddar cheese
  • Sliced green onions
  • Extra shredded cheese
  • Crushed tortilla chips

Instructions

  1. In a large pot over medium heat, brown the ground beef until fully cooked; drain excess fat.
  2. Add diced onion and minced garlic; sauté until the onion is translucent.
  3. Pour in beef broth and add canned tomatoes, corn, black beans, and potatoes; stir well.
  4. Season with smoked paprika, chili powder, cumin, salt, and pepper; bring to a gentle boil then reduce heat to low and simmer for 20-25 minutes.
  5. Stir in heavy cream and shredded cheese until melted and creamy.
