  • 1 can (14.5 ounces) petite diced tomatoes
  • 1 can (15 ounces) sweet corn (drained)
  • 1 can (28 ounces) green enchilada sauce
  • 1 can (14 ounces) chicken broth
  • 1 packet (2 tablespoons) taco seasoning
  • ½ teaspoon cumin
  • ½ teaspoon chili powder
  • ½ teaspoon garlic powder
  • 8 ounces cream cheese (cubed, room temperature)
  • 1 cup (113 g) cheddar cheese (shredded)
  • jalapeno (sliced)
  • cilantro (chopped)
  • lime wedges (for serving)
  • sour cream (for serving)
  • tortilla chips (for serving)

Instructions

  1. In a large pot over medium-high heat, combine shredded chicken, black beans, pinto beans, diced tomatoes, sweet corn, green enchilada sauce, chicken broth, taco seasoning, cumin, chili powder, and garlic powder. Bring to a boil.
  2. Lower the heat and simmer for 20-25 minutes. Stir in cubed cream cheese until melted for a creamy texture.
