  • 23 cups cooked and shredded chicken
  • 4 cups fresh spinach or thawed frozen spinach
  • 8 ounces cream cheese (softened)
  • 1/2 cup sour cream
  • 1 cup shredded mozzarella cheese
  • 1/4 cup grated Parmesan cheese
  • 2 cloves garlic (minced)
  • 1 small onion (finely chopped)
  • 1/2 teaspoon salt
  • 1/4 teaspoon black pepper
  • Pinch of nutmeg (optional)

Instructions

  1. Preheat the oven to 350°F (175°C).
  2. In a mixing bowl, blend the softened cream cheese, sour cream, minced garlic, chopped onion, salt, pepper, and optional nutmeg until smooth.
  3. Fold in the shredded chicken and spinach until well combined.
  4. Stir in half of the mozzarella and all of the Parmesan cheese.
  5. Transfer the mixture into a greased baking dish and top with remaining mozzarella.
  6. Bake for about 30 minutes until bubbly and golden. Let cool slightly before serving.
