2 boneless, skinless chicken breasts
12 oz penne, fettuccine, or spaghetti
1 tablespoon olive oil
4 cloves garlic, minced
1 cup heavy cream
½ cup chicken broth
1 tablespoon Cajun seasoning
¼ cup grated Parmesan cheese
Salt and pepper to taste
Fresh parsley (optional for garnish)
1 tablespoon unsalted butter
1 teaspoon smoked paprika
Fresh lemon juice
Instructions
Cook pasta according to package instructions in salted water until al dente. Reserve half a cup of pasta water before draining.
While pasta cooks, heat olive oil in a skillet over medium-high heat. Season chicken with Cajun seasoning, salt, and pepper. Sauté until golden brown and cooked through (about 6-7 minutes per side). Remove from skillet.
In the same skillet, melt butter and add minced garlic; cook until fragrant (about 30 seconds). Stir in additional Cajun seasoning and smoked paprika.
Pour in heavy cream and chicken broth; stir well to combine and simmer for about 5 minutes until slightly thickened. Add grated Parmesan cheese and stir until smooth.
Slice chicken and add it along with cooked pasta to the sauce; mix well and adjust consistency with reserved pasta water as needed.
Finish with fresh lemon juice before serving hot, garnished with parsley and red pepper flakes if desired.
