  • 2 boneless, skinless chicken breasts
  • 12 oz penne, fettuccine, or spaghetti
  • 1 tablespoon olive oil
  • 4 cloves garlic, minced
  • 1 cup heavy cream
  • ½ cup chicken broth
  • 1 tablespoon Cajun seasoning
  • ¼ cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh parsley (optional for garnish)
  • 1 tablespoon unsalted butter
  • 1 teaspoon smoked paprika
  • Fresh lemon juice

Instructions

  1. Cook pasta according to package instructions in salted water until al dente. Reserve half a cup of pasta water before draining.
  2. While pasta cooks, heat olive oil in a skillet over medium-high heat. Season chicken with Cajun seasoning, salt, and pepper. Sauté until golden brown and cooked through (about 6-7 minutes per side). Remove from skillet.
  3. In the same skillet, melt butter and add minced garlic; cook until fragrant (about 30 seconds). Stir in additional Cajun seasoning and smoked paprika.
  4. Pour in heavy cream and chicken broth; stir well to combine and simmer for about 5 minutes until slightly thickened. Add grated Parmesan cheese and stir until smooth.
  5. Slice chicken and add it along with cooked pasta to the sauce; mix well and adjust consistency with reserved pasta water as needed.
  6. Finish with fresh lemon juice before serving hot, garnished with parsley and red pepper flakes if desired.
