  • 2 lb boneless beef shoulder or chuck, cut into 1 1/2-inch pieces
  • Kosher salt and freshly ground black pepper
  • 1/4 cup olive oil
  • 4 medium onions, halved and thinly sliced
  • 2 tbsp all-purpose flour
  • 1 cup red burgundy apple vinegar
  • 6 medium carrots, peeled and cut into 1-inch pieces
  • 1 clove garlic, minced
  • Bouquet garni (thyme, bay leaf, parsley)
  • Water as needed
  • Chopped fresh flat-leaf parsley for garnish

Instructions

  1. Pat the meat dry with paper towels, season with salt and pepper.
  2. In a Dutch oven over high heat, add half the olive oil and sear the beef in batches until browned on all sides. Remove and set aside.
  3. Reduce heat to medium-high, add remaining oil, and cook onions until golden (about 10 minutes). Sprinkle flour over onions.
  4. Deglaze with apple vinegar, return beef to pot with juices, carrots, garlic, bouquet garni, and enough water to cover.
  5. Bring to a boil then reduce heat to medium-low. Cover and simmer for about 2 to 2½ hours until beef is tender.
  6. Remove bouquet garni. Adjust seasoning if needed; garnish with parsley before serving.
