  • 1 cup shredded carrot (about 1 large carrot)
  • 2 cups chicken broth
  • 15 ounces unsweetened lite coconut milk (1 can)
  • 1/2 pound shredded chicken (about 2 cups)
  • 1 cup cooked white rice
  • 2 tablespoons lime juice
  • 1/4 bunch cilantro

Instructions

  1. In a large pot, melt the butter over medium-low heat. Add shredded carrots, cinnamon, ginger, paprika, and salt. Sauté until the carrots are tender and fragrant.
