  • 45 pound bone-in, skin-on turkey breast
  • 1/2 cup softened unsalted butter
  • Zest of 1 lemon
  • Zest of 1 orange
  • 1 tablespoon fresh rosemary, finely chopped
  • 1 tablespoon fresh thyme, finely chopped
  • 1 tablespoon fresh sage, finely chopped
  • 3 cloves garlic, minced
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 onion, quartered
  • 1 lemon, sliced
  • 1 orange, sliced
  • 1/2 cup chicken broth

Instructions

  1. Preheat oven to 350°F (175°C).
  2. In a bowl, mix softened butter with lemon zest, orange zest, chopped herbs, garlic, salt, and pepper.
  3. Gently lift the turkey skin and spread half of the herb butter under it; rub remaining butter on the skin.
  4. Place onion quarters and citrus slices in a roasting pan; pour chicken broth over them.
  5. Set seasoned turkey breast on top and roast for about 1 hour and 40 minutes until internal temperature reaches 165°F (75°C).
  6. Let turkey rest for 15-20 minutes before carving for juicy slices.
