  • 1 teaspoon chili powder
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 cup cooked rice (white or brown)
  • 1 can black beans, rinsed and drained
  • 1 cup corn (fresh, frozen, or canned)
  • 1 cup cherry tomatoes, halved
  • 1 avocado, sliced
  • 1/2 cup red onion, diced
  • Extra cilantro for garnish
  • Lime wedges for serving

Instructions

  1. In a medium bowl, whisk together lime juice, olive oil, cilantro, garlic, cumin, chili powder, salt, and pepper to make the marinade.
  2. Place flank steak in a resealable bag or shallow dish and pour the marinade over it. Seal or cover and refrigerate for at least 30 minutes.
  3. Cook rice according to package instructions.
  4. Heat black beans in a saucepan over medium heat until warmed through.
  5. Prepare corn by boiling or sautéing (if using fresh) or heating frozen corn until warm.
  6. Preheat grill or grill pan over medium-high heat; grill steak for about 4-5 minutes per side until desired doneness is reached.
  7. Let steak rest for 5-10 minutes before slicing against the grain into thin strips.
  8. Assemble bowls with rice as the base followed by black beans, corn, steak slices, cherry tomatoes, avocado, and red onion.
