Celebrate the season with this vibrant Christmas Salad! Fresh greens, fruits, and a tangy dressing make it a must-try dish for your holiday table.

Ingredients

  • 7 cups mixed spring greens
  • 1 1/4 cups orange segments (mandarin oranges, clementines or tangerines)
  • 1/2 cup pomegranate seeds (can substitute dried cranberries)
  • 1/2 cup feta cheese (crumbled)
  • 1/2 cup candied pecans (roughly chopped)
  • 1/3 cup olive oil
  • 1 tablespoon honey
  • 2 teaspoons Dijon mustard
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon shallot (minced)
  • Salt and pepper to taste

Instructions

  1. In a large bowl, place 7 cups of mixed spring greens to form the salad base.
  2. Gently fold in 1 1/4 cups of orange segments, 1/2 cup of pomegranate seeds, 1/2 cup of crumbled feta cheese, and 1/2 cup of chopped candied pecans.
  3. For the dressing, whisk together 1/3 cup of olive oil, 1 tablespoon of honey, 2 teaspoons of Dijon mustard, 2 tablespoons of apple cider vinegar, 1 tablespoon of minced shallot, and salt and pepper to taste until smooth.
  4. Drizzle the dressing over the salad and toss gently to coat before serving.
