  • 3/4 cup chocolate chips
  • 1 cup raspberries (fresh or frozen)
  • 6 tablespoons unsalted butter (softened to room temperature)
  • 1 oz full-fat cream cheese (brick style)
  • 1 and 1/2 to 2 cups powdered sugar
  • 1/4 teaspoon salt

Instructions

  1. Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking soda, and salt.
  3. In another bowl, cream softened butter with brown and white sugars until fluffy.
  4. Beat in the egg and vanilla until combined.
  5. Gradually add dry ingredients to the wet mixture and fold in chocolate chips.
  6. Scoop tablespoon-sized portions onto the prepared baking sheet. Bake for 8 minutes.
  7. For the frosting, beat softened butter and cream cheese until smooth; mix in powdered sugar and salt, then fold in raspberries.
  8. Once cookies cool, spread frosting on one cookie and sandwich with another.
