  • 2 lbs chicken thighs and legs (bone-in and skin-on)
  • 1/2 cup all-purpose flour
  • 3 tbsp paprika (or Hungarian paprika)
  • 1 tsp sea salt
  • 1/2 tsp black pepper
  • 2 tbsp vegetable oil
  • 1 cup sweet onion (chopped)
  • 1/8 tsp cayenne pepper
  • 2 cups low sodium chicken stock
  • 1 cup sour cream

Instructions

  1. In a bowl, mix flour with paprika, sea salt, and black pepper.
  2. Heat vegetable oil in a large skillet over medium-high heat. Dredge chicken in the flour mixture and brown on both sides for about 3 minutes each. Set aside.
  3. In the same pot, sauté chopped onions and cayenne pepper until onions are tender (about 2 minutes).
  4. Return browned chicken to the pot, add chicken stock, bring to a boil, then reduce heat, cover, and simmer for 45 minutes.
  5. Combine leftover flour mixture with sour cream and some liquid from the pot until smooth. Stir back into the pot and simmer gently for another 5 minutes.
