  • 3 cups dry egg noodles
  • ¼ cup plus 1 tablespoon unsalted butter
  • 2 cloves garlic, minced
  • 1 teaspoon Italian seasoning
  • ½ teaspoon salt
  • ¼ teaspoon onion powder
  • ¼ teaspoon pepper
  • ¼ cup all-purpose flour
  • 2 cups low-sodium chicken broth
  • ¾ cup heavy whipping cream
  • 2 cups frozen peas and carrots
  • 2 cups cooked, chopped chicken
  • 18 saltine or Ritz crackers

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Cook the egg noodles in salted water according to package instructions but undercook by one minute; drain and rinse.
  3. In a saucepan over medium heat, melt ¼ cup butter. Sauté garlic, Italian seasoning, salt, onion powder, and pepper until fragrant. Stir in flour until no white remains.
  4. Gradually whisk in chicken broth and cream; cook until thickened (3-4 minutes). Adjust seasonings as needed.
  5. In a baking dish, mix cooked noodles with sauce, peas and carrots, and shredded chicken.
  6. Crush crackers in a bag; mix with melted remaining butter for topping.
  7. Sprinkle over casserole; bake for about 20 minutes until bubbly and golden.
