  • 300 g pasta (penne or your choice)
  • 300 g chicken breast, cut into bite-sized pieces
  • 2 tablespoons olive oil
  • 3 cloves garlic, minced
  • 1 teaspoon dried Italian herbs
  • 1 can (400g) crushed tomatoes
  • 1/2 cup heavy cream
  • Salt and pepper to taste
  • 1 cup shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Fresh basil leaves, for garnish

Instructions

  1. Cook the pasta according to package instructions in salted boiling water until al dente. Drain and set aside.
  2. In a large skillet, heat olive oil over medium heat. Add chicken seasoned with salt, pepper, and Italian herbs; cook until golden brown (about 5-7 minutes). Remove from skillet and set aside.
  3. In the same skillet, sauté minced garlic for about 1 minute until fragrant. Pour in crushed tomatoes and let simmer for 5 minutes.
  4. Stir in heavy cream and simmer for another 2-3 minutes until slightly thickened.
  5. Return chicken to the skillet and mix well with sauce. Add cooked pasta and toss gently to coat.
  6. Sprinkle mozzarella and Parmesan over the top; stir until melted and creamy.
  7. Garnish with fresh basil before serving.
