  • 1 (20 ounce) package refrigerated cheese tortellini
  • 8 ounces cremini mushrooms (sliced)
  • 3 tablespoons butter (divided)
  • 1 tablespoon olive oil
  • 1 tablespoon fresh sage (chopped)
  • 1 clove garlic (minced)
  • 1/2 cup freshly grated parmesan cheese
  • Salt & pepper (to taste)

Instructions

  1. Bring a large pot of salted water to a boil. Add the tortellini and cook according to package instructions.
  2. While the tortellini cooks, slice the mushrooms and chop the sage.
  3. In a skillet, heat 1 tablespoon of butter and olive oil over medium-high heat. Add chopped sage and sauté until crispy (about 1 minute). Set aside.
  4. In the same skillet, add sliced mushrooms and minced garlic along with another tablespoon of butter. Cook until mushrooms are golden brown (about 5 minutes).
  5. Drain the tortellini and add it to the skillet with mushrooms. Toss in remaining butter and parmesan cheese along with crispy sage, mixing well. Season with salt and pepper before serving.
