  • 200 grams cheese (cheddar or your choice)
  • 2 tablespoons fresh rosemary
  • 2 tablespoons fresh parsley
  • 1 teaspoon dried oregano
  • ½ teaspoon dried thyme
  • 2 garlic cloves
  • 3 tablespoons extra virgin olive oil
  • ½ teaspoon cooking salt or kosher salt
  • 2¼ cups plain flour
  • 1 teaspoon baking soda (or replace with 3½ teaspoons baking powder)
  • ¾ teaspoon cooking salt or kosher salt
  • ½ cup plain yogurt
  • ¾ cup full-fat milk
  • 2 large eggs
  • 50 grams unsalted butter, melted
  • 2 tablespoons olive oil
  • 2 small garlic cloves

Instructions

  1. Preheat the oven to 180°C (350°F). Grease a loaf pan and line it with baking paper.
  2. In a bowl, mix rosemary, parsley, dried herbs, garlic, olive oil, and salt.
  3. In another bowl, whisk flour, baking soda (or powder), and salt.
  4. In a separate bowl, combine yogurt, milk, eggs, melted butter, and garlic until smooth.
  5. Mix wet ingredients into dry ingredients until just combined.
  6. Layer the batter in the prepared pan with dollops of herb mixture and cheese slices.
  7. Bake for 30 minutes; cover with foil and bake for an additional 20 minutes.
  8. Cool before slicing.
