  • 1 whole skirt steak (1.52 pounds)
  • ½ teaspoon kosher salt
  • ⅓ cup olive oil (or avocado oil)
  • ¼ cup apple vinegar (or apple juice vinegar)
  • 3 tablespoons soy sauce
  • 1 tablespoon Dijon mustard
  • 4 cloves garlic (finely minced)
  • 1 tablespoon fresh thyme leaves
  • 1 tablespoon minced fresh rosemary
  • 1 teaspoon ground pepper

Instructions

  1. Trim excess fat from the skirt steak and cut it into 3–4 pieces for even cooking.
  2. Season the steak with kosher salt and place it in a resealable bag.
  3. In a bowl, whisk together olive oil, apple vinegar, soy sauce, Dijon mustard, garlic, thyme, and rosemary. Pour over the steak.
  4. Seal the bag, removing excess air, and marinate in the fridge for at least 2 hours (up to 12).
  5. Preheat grill or skillet to high heat; pat steaks dry and season with ground pepper.
  6. Grill for 3–4 minutes per side for medium-rare.
  7. Allow to rest for 10 minutes before slicing against the grain.
