  • 1 lb (450 grams) carrots, peeled and diced
  • 1 lb (450 grams) potatoes, peeled and diced
  • 2 ½ cups (600ml) low-sodium vegetable broth
  • 1 tsp Italian herbs
  • ¼ tsp dried thyme
  • ¼ tsp dried parsley (optional)
  • ⅛ tsp black pepper, plus more to serve
  • ½ tsp fine salt, plus more to taste
  • 23 Tbsp fresh parsley, chopped

Instructions

  1. In a large pot over medium heat, melt butter or olive oil. Add diced onion with a pinch of salt and pepper; sauté until soft (about 5 minutes). Add minced garlic for another minute.
  2. Incorporate diced carrots and potatoes along with chopped celery. Mix in Italian herbs, salt, and pepper; cook for an additional 2-3 minutes.
  3. Pour in vegetable broth and bring to a boil. Reduce heat to simmer for about 20 minutes or until vegetables are tender.
  4. Allow soup to cool slightly before blending about one cup until smooth (for texture). Return blended mixture to the pot and stir well.
  5. Taste and adjust seasoning as necessary; garnish with fresh parsley before serving.
