  • 2/3 cup granulated sugar
  • 1 1/2 teaspoon all-purpose flour
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1/2 cup sour cream
  • 1 1/4 cups all-purpose flour
  • 1/2 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1/4 teaspoon salt
  • 1 teaspoon ground cinnamon
  • 1/8 teaspoon ground nutmeg
  • 1/2 cup canola oil
  • 1/4 cup unsweetened applesauce
  • 2/3 cup granulated sugar
  • 1/3 cup packed light-brown sugar
  • 2 large eggs
  • 1 teaspoon vanilla extract
  • 1 1/3 cups finely grated carrots
  • 2 oz cream cheese, softened
  • 1 tablespoon butter, softened
  • 1 1/4 cups powdered sugar
  • 1/4 cup + 2 tablespoon sour cream
  • 1/2 teaspoon vanilla extract
  • (Optional) 1/2 cup chopped pecans

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a 9-inch springform pan.
  2. In one bowl, beat softened cream cheese and granulated sugar until smooth. Gradually add flour, eggs, and vanilla extract.
  3. In another bowl, combine flour, baking soda, baking powder, salt, cinnamon, and nutmeg. In a separate bowl, mix canola oil, applesauce, sugars, eggs, and vanilla extract before adding the dry ingredients followed by grated carrots.
  4. Layer half the carrot cake batter in the prepared pan, then pour over the cheesecake batter followed by the remaining carrot cake batter.
  5. Bake for about 60 minutes until slightly jiggly in the center. Let cool before frosting with cream cheese frosting.
