  • 2 pounds beef roast (beef round or chuck steak)
  • 1 tablespoon adobo seasoning
  • 3 tablespoons vegetable oil
  • 1 small onion (chopped)
  • 1 green bell pepper (chopped)
  • ¼ cup sofrito
  • 4 cloves garlic (minced)
  • 8 ounces tomato sauce
  • 1 pound potatoes (cut into bite-sized pieces)
  • 1 large carrot (cut into bite-sized pieces)

Instructions

  1. Cut beef into 1-inch cubes and season with adobo, salt, and pepper.
  2. In a large pot over medium-high heat, heat vegetable oil and sear beef until browned on all sides. Set aside.
  3. Reduce heat to medium; sauté onion, bell pepper, and sofrito for about 5 minutes.
  4. Add minced garlic and cook for another minute.
  5. Return seared beef to the pot along with oregano, tomato sauce, water, olives, capers, and bay leaves; bring to a boil.
  6. Reduce heat to low and simmer for 30 minutes.
  7. Add potatoes and carrots; bring back to a boil then cover and simmer for an additional 30 minutes until beef is tender.
