Ingredients

Scale
  • 4 chicken thighs (bone-in, skin-on)
  • 1 tablespoon vegetable oil
  • 3 tablespoons soy sauce
  • 2 tablespoons brown sugar
  • 1 tablespoon ginger, minced
  • 4 cloves garlic, minced
  • 2 cups chicken broth
  • 2 cups jasmine rice
  • Chopped green onions for garnish
  • Fresh cilantro for garnish

Instructions

  1. Pat the chicken thighs dry and season with salt and pepper.
  2. In a large pot, heat vegetable oil over medium-high heat. Sear the chicken skin-side down until golden brown (about 5-7 minutes), then flip.
  3. Add soy sauce, brown sugar, garlic, and ginger; stir to coat the chicken.
  4. Pour in chicken broth and bring to a gentle boil. Reduce heat to low, cover, and simmer for about 20 minutes until chicken is cooked through.
  5. Meanwhile, rinse jasmine rice under cold water. Cook in another pot with water until fluffy (15-20 minutes).
  6. If desired, thicken the broth by mixing cornstarch with water; stir into the pot and cook for an additional 2-3 minutes.
  7. Serve sliced chicken over rice topped with broth; garnish with green onions and cilantro.
