  • ½ cup diced yellow onion
  • 8 ounces shredded Colby jack cheese
  • 12 ounces tortilla chips (about of a bag)
  • 2 tablespoons taco seasoning

  1. Preheat your oven to 450°F (232°C) and prepare a bundt pan with cooking spray.
  2. In a skillet over medium-high heat, cook the ground beef with onion, salt, and pepper for about 6–7 minutes until browned. Drain excess fat.
  3. Stir in water and taco seasoning; cook for another 2–3 minutes until most liquid evaporates.
  4. Layer half of the cheese in the bundt pan, followed by half of the beef mixture and a third of the chips. Repeat layers and top with remaining chips.
  5. Bake for 10 minutes until bubbly, then carefully invert onto a plate to serve warm with your choice of garnishes.
