  • 1 cup (200 grams) dark brown sugar
  • 1 1/2 cups (190 grams) all-purpose flour
  • 1 cup (127 grams) bread flour
  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1 teaspoon fine sea salt
  • 2 large eggs plus 1 egg yolk
  • 2 teaspoons vanilla extract
  • 10 ounces (283 grams) semisweet chocolate (chopped)
  • 1 cup homemade toffee bits

Instructions

  1. In a medium pan over medium heat, melt the butter, swirling occasionally until browned and fragrant.
  2. Pour the hot browned butter into a mixing bowl. Add granulated and brown sugars; stir until combined and let cool.
  3. In another bowl, whisk together the flours, baking soda, baking powder, salt, and optional espresso powder.
  4. Once cooled, mix in eggs and vanilla into the butter-sugar mixture. Gradually fold in dry ingredients until just combined, then add chocolate chunks and toffee bits.
  5. Wrap the dough in plastic wrap and refrigerate for at least 24 hours.
  6. Preheat oven to 350ºF. Scoop dough onto parchment-lined baking sheets and bake for 12-14 minutes until golden brown.
