  • 3 ounces turkey slices (roughly chopped)
  • 1/2 pound puff pastry
  • 1/4 cup Dijon mustard
  • 2 Tablespoons sour cream
  • 2 Tablespoons mayonnaise
  • Fresh chives for garnish
  • 2 shallots (roughly chopped)
  • 3 garlic cloves (minced)
  • 1 1/2 Tablespoons unsalted butter (divided)
  • 1 1/2 teaspoons minced fresh rosemary (divided)
  • 1/4 cup dry apple vinegar
  • Kosher salt & black pepper (to taste)
  • 1 Tablespoon neutral oil (canola, vegetable, or avocado)
  • All-purpose flour (for dusting)
  • 1 egg (for egg wash)

Instructions

  1. Prepare the sauce by mixing Dijon mustard, sour cream, mayonnaise, minced garlic, and salt in a bowl.
  2. Cook mushrooms and shallots in butter until soft; cool slightly.
  3. Sear beef tenderloin chunks in oil until browned; let cool.
  4. Combine mushroom mixture, turkey slices, and cooked beef in a bowl; season to taste.
  5. Roll out puff pastry and cut into squares. Fill each with the mixture and seal.
