  • ½ baguette (sliced into ¼-inch pieces)
  • 4 tablespoons extra virgin olive oil
  • 2 pieces beef tenderloin (8 ounces each)
  • Salt
  • Fresh ground pepper
  • 1/3 cup pesto
  • 4 ounces cream cheese (softened)
  • 4 ounces goat cheese (softened)
  • ½ teaspoon crushed red pepper flakes

Instructions

  1. Preheat your oven's broiler. Arrange baguette slices on a baking sheet, brush with olive oil, sprinkle with salt, and broil for 1-2 minutes on each side until golden brown. Rub garlic clove on one side of each slice.
  2. Season beef tenderloin with salt and pepper. In a skillet over medium-high heat, add olive oil and cook beef for about 4 minutes per side for medium-rare. Add smashed garlic cloves while cooking for flavor infusion. Let the steak rest before slicing thinly against the grain.
  3. To make the whipped goat cheese, blend softened goat cheese, cream cheese, olive oil, red pepper flakes, and salt until smooth.
  4. Assemble crostini by spreading whipped goat cheese on each toasted baguette slice, topping with sliced beef and a dollop of pesto.
