  • 1 (15 oz) can enchilada sauce (red or green)
  • 1 lb shredded cheese (Monterey Jack recommended)
  • 2 cups refried beans (homemade or canned)
  • 7 corn tortillas (two cut in half)

Instructions

  1. Preheat your oven to 425°F.
  2. Spread about 1/2 cup of enchilada sauce in the bottom of a baking dish. Layer corn tortillas on top.
  3. Spread refried beans over the tortillas, followed by a layer of shredded cheese. Repeat until all ingredients are used.
  4. Cover with foil and bake for 20 minutes. Remove foil and bake an additional 15 minutes until bubbly and golden.
  5. Let cool slightly before serving with your favorite toppings.
