  • 1 cup panko breadcrumbs
  • ½ cup mayonnaise
  • 2 tbsp sweet chili sauce
  • 1 tbsp sriracha (adjust to taste)
  • Juice of ½ lime
  • 1 tsp garlic powder
  • 1 tsp smoked paprika
  • ½ tsp salt
  • ½ tsp black pepper
  • 1 tbsp olive oil or spray for crisping
  • 2 cups cooked jasmine rice (or cauliflower rice)
  • 1 cup shredded purple cabbage
  • 1 avocado (sliced)
  • ½ cup shredded carrots
  • 2 green onions (sliced)
  • Fresh cilantro and sesame seeds for garnish

Instructions

  1. Mix mayonnaise, sweet chili sauce, sriracha, and lime juice in a bowl to create the Bang Bang sauce; set aside.
  2. In another bowl, toss salmon cubes with garlic powder, smoked paprika, salt, and black pepper until evenly coated.
  3. Coat seasoned salmon pieces with panko breadcrumbs.
  4. Preheat oven to 400°F. Arrange salmon bites on a baking sheet lined with parchment paper and lightly drizzle with olive oil.
  5. Bake for about 12 minutes or until golden brown.
  6. Assemble bowls with rice as the base topped with salmon bites, shredded cabbage, avocado slices, shredded carrots, and green onions. Drizzle with Bang Bang sauce.
