  • 2 tablespoons olive oil
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 2 cups cooked chicken, shredded or diced
  • 1 tablespoon butter
  • 2 cups fresh broccoli florets
  • 1/2 cup sour cream
  • 1/2 cup milk
  • 1 cup shredded cheddar cheese
  • 1/2 cup grated Parmesan cheese
  • 1 teaspoon garlic powder
  • 1 teaspoon onion powder

Instructions

  1. Preheat your oven to 400°F (200°C).
  2. Toss the diced potatoes with olive oil, salt, and black pepper. Spread them out on a baking sheet and roast for about 20-25 minutes until golden.
  3. Steam or boil the broccoli florets until just tender (about 4-5 minutes), then drain.
  4. In a saucepan over medium heat, melt butter and add the cooked chicken until heated through.
  5. In a mixing bowl, combine sour cream, milk, garlic powder, onion powder, and half of the cheddar cheese.
  6. In a large casserole dish, layer roasted potatoes, chicken, steamed broccoli, and pour the creamy mixture on top. Stir gently to combine.
  7. Top with remaining cheddar cheese and Parmesan cheese. Reduce oven temperature to 350°F (175°C) and bake for about 20-25 minutes until bubbly and golden brown.
  8. Let it rest for about 5 minutes before serving.
