  • 1.5 lb cod fillet pieces (46 pieces)
  • 5 tbsp fresh lemon juice
  • 5 tbsp extra virgin olive oil
  • 2 tbsp melted butter
  • 5 garlic cloves (minced)
  • 1/3 cup all-purpose flour
  • 1 tsp ground coriander
  • 3/4 tsp sweet Spanish paprika
  • 3/4 tsp ground cumin
  • 3/4 tsp salt
  • 1/2 tsp black pepper
  • 1/4 cup chopped fresh parsley leaves

Instructions

  1. Preheat your oven to 400°F.
  2. In a shallow bowl, mix lemon juice, olive oil, and melted butter.
  3. In another bowl, combine flour with ground coriander, sweet paprika, ground cumin, salt, and black pepper.
  4. Pat the cod fillets dry; dip in the lemon mixture then coat with the flour blend.
  5. Sear in a skillet with olive oil for about 2 minutes on each side until lightly browned.
  6. Add minced garlic to the remaining lemon sauce and drizzle over the fish.
  7. Transfer to the oven and bake until flaky (about 10 minutes).
  8. Garnish with parsley before serving.
