  • 6 slices of turkey bacon (or plant-based bacon)
  • 1 medium onion, finely diced
  • 2 cloves garlic, minced
  • 4 cups chicken broth
  • 1 cup heavy cream
  • 1 pound of gnocchi
  • 2 cups chopped fresh spinach
  • 1 cup shredded cheddar cheese
  • 1 tablespoon olive oil
  • 1 teaspoon dried thyme
  • 1 teaspoon smoked paprika
  • 2 tablespoons all-purpose flour
  • 2 tablespoons butter
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, cook the chopped turkey bacon until crispy. Remove and set aside.
  2. Sauté the diced onion in the remaining grease until translucent, about 5 minutes. Add minced garlic and cook for another minute.
  3. Sprinkle in flour and stir to form a roux; cook for 1-2 minutes.
  4. Gradually whisk in chicken broth; bring to simmer.
  5. Stir in heavy cream, thyme, and smoked paprika.
  6. Add gnocchi and cook until they float (about 3-5 minutes).
  7. Reduce heat; stir in cheddar cheese until melted.
  8. Season with salt and pepper; add spinach and reserved bacon before serving.
