  • 2 pounds beef chuck, cut into 1-inch cubes
  • 3 tablespoons olive oil
  • 1 large onion, diced
  • 3 cloves garlic, minced
  • 4 cups beef broth
  • 2 cups carrots, sliced
  • 2 cups potatoes, diced
  • 1 cup parsnips, diced
  • 1 cup celery, diced
  • 1 tablespoon tomato paste
  • 2 teaspoons dried thyme
  • 1 teaspoon dried rosemary
  • 1 bay leaf
  • Salt and pepper, to taste
  • Fresh parsley, chopped (for garnish)

Instructions

  1. Heat olive oil in a large pot over medium-high heat. Sear beef cubes in batches until browned on all sides.
  2. Add the onion and garlic to the pot and sauté until the onion is translucent.
  3. Stir in tomato paste and cook for an additional minute.
  4. Deglaze the pot with a splash of beef broth, scraping up any browned bits.
  5. Return seared beef to the pot along with remaining broth and add carrots, potatoes, parsnips, and celery.
  6. Season with thyme, rosemary, bay leaf, salt, and pepper.
  7. Bring to a boil then reduce heat to low. Cover and simmer for about 2 hours or until beef is tender.
  8. Taste before serving; adjust seasoning if necessary. Garnish with fresh parsley.
