  • 4 boneless chicken breasts
  • 1 lb fresh asparagus (cut into 1-inch pieces)
  • 3 cups cubed potatoes (½-inch sides)
  • 1 medium onion (chopped)
  • 2 cloves garlic (minced)
  • 1 cup heavy cream
  • 1 cup chicken broth
  • 1 tsp fresh thyme leaves
  • ½ tsp paprika
  • 1 cup sharp cheddar cheese (shredded)
  • Olive oil, salt, and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and lightly grease a 9×13-inch baking dish with olive oil.
  2. Season chicken breasts with salt and pepper, then sear in a skillet over medium heat until golden brown on both sides. Remove and set aside.
  3. In the same skillet, sauté chopped onion until softened, then add minced garlic. Cook for an additional minute.
  4. In the skillet, combine heavy cream and chicken broth; whisk in thyme and paprika. Simmer until slightly thickened.
  5. Layer half of the cubed potatoes in the prepared dish. Add asparagus pieces, seared chicken, half of the bacon (if using), and pour over the cream sauce followed by remaining potatoes and bacon.
  6. Top with shredded cheddar cheese, cover with foil, and bake for 25-30 minutes. Remove foil and bake uncovered for another 15-20 minutes until golden brown.
  7. Allow to rest for about 5 minutes before serving.
