  • 1/2 cup unsalted butter, softened
  • 1/2 cup sugar
  • 1/4 cup light brown sugar, packed
  • 1 large egg
  • 1 1/2 cups all-purpose flour
  • 1 teaspoon cream of tartar
  • 1/2 teaspoon baking soda
  • 1/8 teaspoon salt
  • 1/4 teaspoon nutmeg
  • 1/2 teaspoon allspice
  • 1/4 teaspoon cinnamon
  • 2 tablespoons sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a medium saucepan, reduce the apple cider over medium heat until slightly thickened.
  3. Cream together the softened butter, sugar, and brown sugar until light and fluffy. Add in the egg and reduced apple cider; mix until well combined.
  4. In another bowl, whisk together flour, cream of tartar, baking soda, salt, and spices. Gradually add this to the wet mixture until just combined.
  5. Scoop dough onto prepared sheets and roll each ball in a mixture of sugar and cinnamon before placing them on the sheets.
  6. Bake for 12–15 minutes or until lightly golden around the edges. Allow to cool before transferring to wire racks.
