  • 1/2 cup brown sugar
  • 1/3 cup applesauce
  • 1/2 cup apple cider
  • 2 eggs
  • 1/2 cup butter, softened
  • 12 tbsp water, milk, or more apple cider
  • 1 tsp vanilla extract
  • 1/2 tsp cinnamon
  • pinch of nutmeg
  • 2 cups powdered sugar

Instructions

  1. Preheat your oven to 350°F (175°C) and prepare a muffin tin with liners.
  2. In a large bowl, whisk together oat flour, baking powder, salt, cinnamon, and other spices.
  3. In another bowl, mix melted butter, brown sugar, applesauce, apple cider, vanilla extract, and eggs until smooth.
  4. Combine wet and dry ingredients gently until just blended.
  5. Fill cupcake liners two-thirds full and bake for 20-22 minutes or until a toothpick comes out clean.
  6. While cooling, prepare the frosting by beating softened butter and gradually adding powdered sugar along with spices and liquid until smooth.
  7. Once cooled, frost your cupcakes generously.
