  • 45 lb beef shoulder roast
  • 2 cups fresh apple cider
  • 2 cups chicken stock
  • 2 tablespoons neutral oil
  • Kosher salt
  • Freshly cracked black pepper
  • 2 tablespoons Dijon mustard
  • 1 tablespoon dehydrated minced onion
  • 1 head of garlic, top sliced off opposite of the root end
  • 3 rosemary sprigs
  • 4 thyme sprigs
  • 1 red onion, cut into thick slices
  • 2 firm and slightly tart apples, peeled and cut into wedges

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Trim excess fat from the beef and cut it into four large pieces, patting dry.
  3. Heat neutral oil in a Dutch oven over medium-high heat and sear the beef pieces until browned on all sides (about 4-5 minutes each side).
  4. In a bowl, whisk together apple cider, chicken stock, Dijon mustard, and dehydrated minced onion.
  5. Pour the braising liquid over the beef in the pot and add tied herbs and garlic head.
  6. Cover tightly and braise in the oven for about 3 hours.
  7. Add red onion slices and apple wedges around the beef and cook for an additional 30-45 minutes until tender.
  8. Let rest before serving.
