  • 1¼ cup all-purpose flour
  • ¼ teaspoon kosher salt
  • 1 teaspoon sugar
  • ½ cup sharp white cheddar cheese, shredded
  • 1 teaspoon fresh thyme
  • 1 tablespoon white grape juice
  • 2–3 tablespoons ice cold water
  • ¾ cup sharp white cheddar cheese, shredded, divided
  • 1 large honeycrisp apple, cored and thinly sliced
  • 2 tablespoons salted butter, melted
  • 2 teaspoons granulated sugar
  • 1 teaspoon milk
  • Flaky salt
  • Honey, for drizzling
  • 2 sprigs fresh thyme, leaves only

Instructions

  1. In a large bowl, mix together your flour, salt, sugar, cheddar cheese, and fresh thyme. Cut in the butter until coarse crumbs form. Gradually add in white grape juice and ice water until the dough holds together nicely. Form it into a disk shape and wrap it in plastic wrap. Chill the dough for at least 30 minutes.
  2. While your dough chills in the fridge, core and thinly slice the honeycrisp apple. Toss the slices with melted butter and sugar in a bowl.
  3. Once chilled, lightly flour your surface and roll out your dough into a rough 10–12 inch circle. Transfer this rolled-out dough onto a parchment-lined baking sheet.
  4. Sprinkle half of the shredded cheddar cheese right in the center of your crust while leaving about a two-inch border around the edges. Arrange the apple slices on top and finish by topping with the rest of the cheddar.
  5. Fold the edges of dough over the apples gently pleating as you go. Brush your crust with milk and sprinkle some flaky salt on top. Bake at 400°F (200°C) for about 35–40 minutes until everything looks golden brown and bubbly.
  6. Once out of the oven, drizzle honey over your galette and scatter fresh thyme leaves on top before serving.
