  • 2 tablespoons coconut oil
  • 1/4 teaspoon cumin seeds
  • 1 onion (chopped)
  • 4 cloves garlic (minced)
  • 1/2 inch ginger (grated)
  • 10 ounces chopped spinach (fresh or frozen)
  • 2 teaspoons ground coriander
  • 1 teaspoon ground cumin
  • 1 teaspoon ground turmeric
  • 1 teaspoon ground paprika
  • Sea salt (to taste)

Instructions

  1. Boil the potatoes in a large pot until tender, about 15 minutes. Drain and set aside.
  2. In a large saucepan over medium-high heat, melt coconut oil. Add cumin seeds and let them sizzle until fragrant.
  3. Sauté the chopped onions for about 3 minutes until soft. Add minced garlic and grated ginger; cook for another minute until fragrant.
  4. Stir in ground coriander, cumin, turmeric, and paprika; mix well to coat.
  5. Add chopped spinach and cook until wilted, about 2 minutes.
