  • 1 lb large raw shrimp (peeled and deveined)
  • 2 large eggs
  • 1.5 cups panko breadcrumbs
  • ½ cup tapioca flour
  • ½ cup mayonnaise
  • ¼ cup Thai sweet chili sauce
  • 10 flour tortillas
  • coleslaw mix

Instructions

  1. Pat the shrimp dry and set up a dredging station: one bowl with tapioca flour mixed with seasonings, another with panko breadcrumbs, and a third with whisked eggs.
  2. Dredge each shrimp in the flour, dip in egg, and coat with breadcrumbs. Place in the air fryer basket.
  3. Air fry at 390°F for about 7 minutes, flipping halfway through.
  4. While shrimp cooks, combine bang bang sauce ingredients in a bowl and mix slaw ingredients in another.
